While the email is the fastest and most convenient way to communicate these days, how could I encourage friends and contacts to send me or reply via post office using stamps?
(whatever size and color, stamps are always beauuuuuuuuutiful!)

O So true. It is now a collectors paradise at the Postal Service. And yes please tell your friends and family to keep sending cards and letters through the post. It is a dying profession but if we all stick together we can keep it from going out. Please do not forget not everyone has a computer or can have access to one at all times. So keep writing and keep collecting. Some times you may need to send stamps through the mail or A letter just to say hello. Tell them that being a collector and maybe not being able to get to the post as often as you would like, that a stamped envelope or a postalcard is still important to you. Do Not Forget when you or your friend or family are on vacation taking the computer is not always a smart thing to do. And even if they are not on vacation, tell them that it is nice to have a personal item like a note in the mail can brighten up your day. It u=is not the same as an email. With a letter or card you can store them for future reading. Yes you can do the same with email but think of the energy you will save on just not having to turn on the computer.
